How do you know if a game will list who is in and who is out.  Whats the code word that tells the game when some one drops or will be hidden till the end.  I ask that for I just finished an anon game and I still do not know 2/3's of the players who played.

The first post in the thread should give the rules.  In a truly blind version like your describing, the first post would instruct interested players to contact support instead of posting or something like that.

Dropped positions are a bit different.   Most of the time,  a player will have failed to send in orders for a few turns before the official announcement.   If an announcement is my first clue that someone dropped,  I usually assume that a neighboring player noticed and started moving in already.
